I like the way Angel Beats! ended. I just wish they would have put a few more arcs in the middle. Maybe showed the lives of a few more characters before they died. Maybe showed another character come into the world. That kind of stuff.
That being said, I'm not sure it would have improved the anime (it could of hindered it actually) and it's just what I want, not what is the best outcome.

A lot of anime are based off lengthy or ongoing manga, so the plot is cut short and the ending is improvised. And those endings tend to suck. Air Gear and Claymore are shows I liked that had terrible endings. I really wanted to see more seasons of Air Gear, but OVAs are being made, so it's unlikely. The ending for Claymore screwed up the canon so bad, it's impossible to continue the anime ):

Most of my favorite anime had satisfying endings, and I would prefer most of them to be left alone. I kind of want more episodes of FLCL... but I guess one of the reasons why it was special is because it was so short ?__?

They could make Elfen lied S2 that continues after this end. just like in the manga.

death note???im sorry but that anime was horrible the characters were just boring,most of them had the same types of persanilities,its like seeing a bunch of dopplegangers.theres not much of a plot going on either and people dont have proper motivation to propel the story forward.plus it ended so horribly too,light just dies and goes to hell where hes tortured and butt raped???im sorry but im glad that they didnt make any more episodes.

From what I recall Death Note was actually only meant to be 2 seasons but it was split into 3 for some reason...

If you're counting that doujin anime then good luck, it's taking them 2 years each episode because money and everything (the next episode is apparently coming out in summer comiket)

But don't ever count on an official anime ever. ZUN is against such a thing atm since if it ever happens he'd want full control over it, but he's doubtful if they'll ever give that.
