Help me with the basics?

Well, I decided to go and get the Iroha Nekomura demo just to see what it was like. And by jove, that 1-2 hour wait was well worth it. Her voice is so mature yet mellow, and I love it to pieces! But of course, I have a few questions
Well first, I'm not so sure how to change it to English. I've heard you delete/rename the files with _Japanese after them, but I still don't get it...
And if possible, could someone guide me around the interface a bit? I already know how to make notes and enter the phonetics, but everything else is such a blur!

Could you possible explain what confuses you? Its kinda hard to try to explain how most the stuff works without knowing what you already know about the interface.
