I always have a hard time choosing this, but I love Chikorita. Also, Ralts and it's evolutions.

Umbreon, Espeon and Mew have always stood out amongst other Pokemon to me. I always make me Eevees evolve into Espeon and Umbreon first. I only get the other Eeveeloutions just to complete the Pokedex.

Grass Types: Chikorita, Bulbasaur, Oddish, Gloom, Vileplume.

Fire Types: Charmander, Rapidash, Ponyta

Water Types: Squirtle, Corsola

Ground Types: Diglett, Cubone (My best, in tie with Oddish family)

Psychic Types: Ralts, Kirlia, Abra, Kadabra, Alakazam

Normal Types: Clefairy, Clefable, Eevee, Rattata

Flying Types: Pidgey, Pidgeotto, Pidgot
